I haven't used DD-WRT since my old WRT54gs and am out of the loop. What would be the best build for my WRT 1900AC V2?
I am on stock FW right now and am looking for a build that is more stable.
I've also read that KONG builds are supposed to provide better performance over BS builds. But as stated I am pretty far out of the loop. Any help is appreciated. Thanks.

Start by reading the sticky note. Also read the links in my sig to get started. The WRT's have 2 seperate partitions and you need to understand what all that means. so do reading before jumping in. Kong does not support these routers, he did at one time, but got frustrated with the slowness of wireless driver fixes. That is pretty well behind us now especially if you are using the older WRT and not the wrt3200.
You will find two schools of thought once you get into the 2 partitions. One is just update dd-wrt and overlay the Linksys firmware and the other I subscribe to of always flashing from the Linksys UI. Be sure you understand what all the means.
Latest builds, all beta of course, are found here. I would start with the latest and go from there.

I have a WRT1900ACv2, and I use r33342 since it's release. No bug at all for what I use:
dnsmasq, uPnP, VPN client ( PIA ) Policy base routing, Access Restriction ( works only for ip outside of the VPN )
