Hello. I have a Netgear R7800.
Is it possible to determine that some VLans pass their traffic through OpenVPN while others transmit data directly to the provider's router?

That is called Policy Based Routing (PBR)

OpenVPN guides are a sticky in he Advanced Networking forum to which I will move this thread.
You need to Client setup guide which has a paragraph about PBR

WireGuard (also a sticky in the Advanced forum) is easier to setup and three times faster
