here is my set up.

E2000 receiving signal from my dad next door (no need to have 2 bills if we don't use a lot of bandwidth)

E1200 being used as my access point

i want to DIY a POE adapter for my E2000 but i want to know if i can do this since its a GB switch but will be going to the E1200 which is only 10/100 switch. will this cause me problems or will the E2000 switch default to 10/100 being plugged into the E1200?

So let me get this right. Both the E1200 and E2000 are on your premises and you want to put a PoE adapter between the two?

If that's your plan then yeah the E2000 will drop down it's port speeds to 10Mb since that's all the E1200 can do just like it would for any other client.

Not sure if I got your question right though.
