Try to made a research into JTAG, there are different "programs" stored inside your device which are even more "basic" than the firmware, there are 2 of them working for different tasks, for one of them i remember someone was warning to not to touch it as it will be difficult to get a copy of it, unless you have another device of the same make and model from which you can squeeze it out.
I can't remember the links, but Googling up a bit should take you there, good luck!

Stock FIRMWARE for the EOC2611p is available at
http://www.engeniustech.com/resources/EOC2611P%20v1.3.1.zip

However, if I recall correctly, the firmware does not have the stock redboot image in it... I might still have it here somewhere; as I had to recover one of mine a few months back... I will edit this post when I find it.

EDIT: Found and uploaded
http://theigb.com/senao_eoc2611p/

Those are RAW dumps of the stock eoc2611p; what you will prolly need is the redboot image, rootfs, and vmlinux; which you should be able to upload into redboot and burn the the appropriate locations.

Also, don't burn the entire mtd (the 8m one); make SURE you backup your cfg partition first- if you burn my config partition, you'll end up with my MAC addresses and password and whatnot.. HW reset will fix most of it, except for the MACs..

EDIT2: Here is the factory's fis list, you'll likely need to know where toe above files need to get dumped:
Code:

RedBoot> fis list
Name              FLASH addr  Mem addr    Length      Entry point
RedBoot           0xA8000000  0xA8000000  0x00030000  0x00000000
rootfs            0xA8030000  0xA8030000  0x004F0000  0x00000000
vmlinux.bin.l7    0xA8520000  0x80041000  0x000C0000  0x80041798
cfg               0xA85E0000  0xA85E0000  0x00010000  0x00000000
FIS directory     0xA87E0000  0xA87E0000  0x0000F000  0x00000000
RedBoot config    0xA87EF000  0xA87EF000  0x00001000  0x00000000
