Hi

Currently my router (Fritzbox) doesn't offer a sufficient QoS solution. I'd like to know if I could set my current router to just connect to the internet and have another router (possibly a NetGear WNR3500L v2) running DD-WRT handle the DHCP side of things and also apply QoS rules.

I think YES ... if your actual Fritzbox has modem feature too
In this case you will connect your Fritzbox in full bridge mode to new router
