The best way to survey with either of those is to couple the data with GPS so that you can build a map of reception.

It looks like you will have wireless internet connection everywhere you need it.
However for the purpose of improving signal I'd put a couple of the wrt54g-tm's around as repeaters.
I set these up with 8dbi antennas so a signal that would be weak to the computer is strong on the router.
As your main problem here seems to be penetration through the walls no one location or router will give you evenly distributed high speed.
Now, if you want to get ambitious:
Linksys POE adapter.
Ceiling mount antenna
CAT5 to the hallway ceiling and bury a DD-wrt in the ceiling.
This would probably give you the best distribution pattern. I'd recommend placing your router in the hallway and rerunning the tests again to see if it's worth the trouble.

I'm travelling right now but I will read more carefully later. I liked your suggestion about putting the router in the hallway, the only problem would be the Desktop, that is wired. Signal is very weak in the left side of laundry and final room, almost no signal at all. Kitchen is also pretty compromised..
I see a blind spot in the downside (down, left) of dinner room also..
