r31924 is really the last "good and stable" release for the V1. It was built in May. I'm worried about security updates at this point.

As of now, yes. 31924 is the current stable build for the WRT1900AC V1.
I personally wouldn't worry about the security of my home router nearly as much as my mobile devices. (All should be patched by now as long as you updated everything)
Someone with knowledge of how to exploit the vulnerability would have to be within wireless range of your router.
However, if you have the coin, there are plenty of great routers out there. If you're looking to stay with a WRT I would recommend the WRT1900ACS V2.

Yeah, I haven't really kept up with home networking. Plus, I'm really happy with my DD-WRT config. I don't really want to change anything, I just want to make sure I don't get left behind on patches. So getting a V2 may be my best bet - that's IF I need to do anything at all. I'm sure at some point Brainslayer will put out a fix for the WRT1900AC v1. There are still plenty out there.
I'm patiently waiting for a build with the new Kernel version, but as you said - I'm in no rush.

I upgraded to version DD-WRT v3.0-r34315 std due to security issues (connections where dropping for unknown reasons). At the moment it seems to run well but the kernel brand 4.9 has been unstable in the past (reboots). I hope that kernel version 4.9.72 is stable. CPU speed is limited to 600Mhz rather than 1200Mhz as it's supposed to be (I guess this is due to cpufreq setting in the kernel).
I got Linksys WRT-1900AC v1. I will know in few hours if I can use this build or not.

For Version 1 of the WRT1900AC any build that has Linux 4.x.x kernel is not stable. It randomly drops lan-to-wan connectivity that can be fixed simply by renewing the WAN DHCP lease. If you do not restore it the router will reboot after several minutes of no WAN connectivity.
This is where it gets weird. I set up wireshark to monitor traffic. I found that while there is no LAN-TO-WAN connectivity you can successfully ping the WAN port from the public facing side and get a response, if you have that option enabled. (Used laptop tethered to a mobile phone for that test.) I also found that if you have any port forwarding rules setup, inbound traffic from the WAN will traverse the NAT and reach the destination device on the LAN, but any reply that device sends will not reach the WAN port. (I could see the replies sent via Wireshark, but those replies never seemed to reach the WAN port.)
Is it being dropped by the firewall(iptables) or NAT, I have no idea. So far all I have found is that if you go to STATUS -> WAN then click 'DHCP Renew' button connectivity is restored almost instantly.
Long story short. Outbound traffic randomly stops even though the wan port is up and functioning. Inbound traffic from the WAN that match an explicit rule are routed and delivered normally at all times.
I'm now running v3.0-r31924 std (05/02/17) with Linux 3.18.51 #131 SMP Sun Apr 30 20:34:24 CEST 2017 armv7l and has been up and running with no problems now for 11+ days. With builds after r31924 the longest I could keep them running was about three hours.
Note: Turning off one or both radios does not change anything, the LAN-To-Wan connectivity still drops randomly.
So far all I have found is that if you go to STATUS -> WAN then click 'DHCP Renew' button connectivity is restored almost instantly.
